These golden brown beef treats make a great meal any night of the week. This Recipe for Ground Beef Empanada keeps it simple and tasting good. Perfect for those of you out there that prefer a little spice, I know I do.
INGREDIENTS
1/2 teaspoon chili powder
1/4 teaspoon oregano
1 1/2 pounds ground beef
1 onion, diced
2 jalapeno peppers, diced
All-purpose flour
1 tomato, diced
2 packages frozen empanada pastry disks, thawed
Salt and Pepper
DIRECTIONS
1. Preheat oven to 400 degrees.
2. In a skillet over medium-high heat, brown ground beef, breaking up the meat into small morsels. Cook for roughly 5 minutes, until no pink is found.
3. Add onions, jalapenos, tomatoes. Stir in chili powder and oregano. Cook for 15 - 20 minutes.

5. Allow mixture to cool to room temperature.
6. Prepare a work surface by covering it with flour. With a rolling pin, gently roll out an empanada disk.
7. Place approximately 2 heaping tablespoons of empanada mixture into the center of the pastry disk. Dip a pastry brush in water and moisten the outer edge of half of the disk; fold disk in half and use a fork to press the edges together.
8. Repeat for each empanada, re-flouring your work surface as necessary.
9. Place empanadas on a cookie sheet and bake approximately 25 minutes or until golden brown.
